being from new york, the concept of thanksgiving in october took a few years for me to get used to, but any day i can take the day off and cook my arse off, i’m thankful for. it makes more sense anyway, having it centered around the harvest time and not a day of pre-christmas-shopping football-watching laziness in november. i never got that.
i’m making baked chicken breasts with onion and rosemary jammed under the skin, something with sweet potatoes (wish i had marshmallows..yumm), and this delish black bean/butternut chili.
i’m grateful for living in awesome country, solid people in my life, darling pets, health, and for being given so much every day.
